Stelvio o Stilfser P.D.O.

The production of this cheese is attested by some documents of the Stilf (Stelvio) cheese dairy dating back to 1914, but the diffusion of the cheese product in general is well rooted in its territory of origin. Land books from the 13th and 16th centuries document the use of cheese as a medium of exchange, demonstrating the importance it had in the economic fabric of society.
