Cheese Ambassador - Forme 2023

FORME Cheese Ambassadors, launched in 2022, aims to establish a network of urban venues in Bergamo dedicated to celebrating cheese culture. By introducing these venues as destinations for cheese enthusiasts within the larger FORME community, the initiative ensures that the immersive journey into the world of fine cheese extends beyond the event itself.

Albergo Ristorante Il Sole Bergamo

The first official list of inns and hotels in Bergamo appears in the Estimo of 1527.

“Ad solem in platea” is the only one still present and located in the same place.

The philosophy that distinguishes the Ristorante Albergo Il Sole is the continuous search for quality products, favouring the territory and its products, collaborating with small producers and artisans and trying to represent the enormous and historical culinary heritage of the place, thus sharing the flavours and knowledge of the land that hosts us.

BARETTO

Love of beautiful things. The first beauty is the place, an enchanted landscape with colours that mark the seasons and leave the visitor with bated breath. The Baretto di San Vigilio, on Via al Castello in Bergamo Alta, is a gem of refinement and romanticism, an elegant space that tells the story of a family and its owner who, with the memories and emotions of a lifetime, have made the Baretto a meeting place for the people of Bergamo, a space to be discovered by tourists.

BAR FLORA

A historic bar overlooking the beautiful Piazza Vecchia, it offers dedicated services for breakfast, aperitifs, cocktail bars, lunches and dinners. From its small kitchen, every day you can order different types of dishes, all selected with the best ingredients and all cooked with the desire to make every moment of the meal tasty. It also has two locations, one in the Lower Town and one in the Upper Town, for those who want to enjoy Bergamo to the full, staying overnight amidst its picturesque scenery.

BU’ CHEESE BAR

The only Cheese bar in the centre of Bergamo offers lunches and dinners with hot and cold dishes, aperitifs, cocktails and an excellent selection of wines. Not only cheese then, but the choice of cheese trolley is given special attention. Bù Cheese Bar is open every day from lunch to after dinner: it is a point of reference for citizens and tourists who want to learn more about the world of Bergamo cheese and the region.

With an eye always open to innovation. The historic restaurant is located in the medieval heart of Bergamo, once the site of an ancient monastery later converted into a prison. DA MIMMO

Da Mimmo is a historic restaurant in Città Alta founded in 1956 by Mimmo Amaddeo and his wife Lina. It is located in the Casazza, a building dating back to 1357. The cuisine is authentic and inspired by nature, the seasons and the land. It is a Slow Food alliance restaurant, so most of the ingredients used – flour, butter, eggs, honey, meat, cold meats, cheese, milk, vegetables, fruit – come from local and organic production.

DAI GUSTOSI

Restaurant with typical Bergamo cuisine and pizzeria, open for both lunch and dinner.

Among its proposals are casoncelli, gnocchi – and more – with home-made pasta and dishes prepared according to local traditions, including the not-to-be-missed braised beef, but also traditional Roman dishes, such as amatriciana cooked strictly according to the original recipe inherited from the father of Giusy, the restaurant owner.

It has a wide range of dishes to choose from: a dozen first courses, main courses and vegetarian and summer dishes that in winter are replaced by delicious fragrant soups.

DASTE BISTRO’

DISPENSA FRANCIACORTA

A chic restaurant with contemporary décor, it offers an elegant wine bar and traditional Italian cuisine. Dispensa is a landmark in Franciacorta for lovers of good food and wine. Guests discover Franciacorta through an aperitif at the bar, wines from the Enoteca and traditional dishes from the Osteria. FLY PUB

A pub in the heart of Città Alta, open from lunchtime to after dinner, offering a typical Bergamo trattoria menu.

Founded in 2013 as the first Maspy Brewery pub, its philosophy is to offer customers only handmade products, with local raw materials and freshly cooked.

It also has a selection of beers, exclusively Maspy, with 8 types always available.

HOSTERIA DEL VAPORE

A passion for good, genuine things is the philosophy of the Hosteria del Vapore. This is immediately clear from the choice of raw materials, which come from small producers with whom it often has a direct relationship, and from the wine list, the result of a careful selection of small artisans, made up of more than 400 labels and focused on natural wines.

The cuisine is linked to the territory and revisited in a modern key, with simple but clear-cut flavours, preparations linked to Bergamo, with a wide choice of meats and cheeses as side dishes.

Lalimentari brings together the traditions and historical products of the Bergamo area, with an eye to the present. It offers local, genuine, controlled and guaranteed raw materials, with a quality that expresses the attention of those who supplied them and those who processed them.

LOCANDA CECE SIMO

Cesare and Simone, for everyone – but really everyone – Cece and Simo, met as cooks a few years ago, behind the cooker of a well-known restaurant in Bergamo where, among pots and pans, sharing a passion for cooking and good things, a great friendship was born. A fellowship that turned into a true professional relationship when, in 2001, they decided they were old enough to have their say in the city, convinced that their expertise, experience and innate love of good food would guide them in the right direction. And so they did.

LATTERIA DI BRANZI 1953 – BRANZI

Now in its third generation, for 70 years the Branzi dairy has been collecting fresh milk daily from around 60 small farms in the Upper Brembana and Imagna Valleys. The daily processing of mountain milk gives the typical Branzi cheese, ricotta, taleggio and a wide range of desserts. The cellars season not only Branzi FTB, but also other renowned cheese products from the area. The shop also offers an excellent selection of wines and other local specialities.

LATTERIA DI BRANZI 1953 – ZOGNO

At the dairy in Zogno, you can not only buy all the goodness of Latteria di Branzi’s dairy products and a wide selection of excellent dairy products from all over Italy, but also taste traditional dishes. The restaurant is open on Saturdays and Sundays for lunch and dinner while, even during the week, sandwiches and chopping boards are always available, ideal also for a rich aperitif.

RISTORANTE BOLLE

A modern restaurant with design elements, contemporary cuisine in continuous research that marries Lombard tradition. It offers a specially designed cheese trolley, a selection of local, Italian and foreign products. It combines its own caramelised bread with homemade jams, fresh seasonal fruit and the best chestnut honey from the Seriana Valley.

RISTORANTE CLU

Ristorante Clu was born with the idea of reviving a historic village, that of Ubiale Clanezzo, with a friendly and confidential approach. It offers simple, straightforward cuisine that makes its way within the walls of the castle that house it, in a picturesque setting with fairytale surroundings. Here you can try unusual combinations, but in which each element is clearly recognisable and without peaks, so as to recreate balance. The menu follows the seasons, but above all the emotions of the moment. Essential cuisine, artisanal wines.

RISTORANTE OL GIOPI’ E LA MARGI’

Typical Bergamo cuisine served in a building dating back to the 1700s. The restaurant offers products from small local artisans and dishes prepared according to ancient recipes, served by staff wearing the characteristic Margì costume. Farmhouse cured meats, stone-ground polenta, casoncelli alla bergamasca, scarpinocc di Parre, risotto with Taleggio Dop cheese and prized black truffles, braised meats with Valcalepio Doc, a trolley of Dop cheeses, exclusively from the Bergamo Valleys, and a rich trolley of artisan desserts served by the spoonful. RISTORANTE PIZZERIA SERENELLA

Serenella is a dynamic restaurant near Brescia’s historic “Borgo Trento”, which makes tradition and research its watchwords. It offers dishes cooked with complete respect for the organoleptic properties of foods and with preparations that enhance them. Known for its “San Marzano” pizza, presented in Hamburg and winner at the 2015 European championship, it presents a fundamental cuisine in which Mediterranean flavours are the real protagonists and boasts a wine cellar with more than 100 labels.

RISTORANTE PIZZERIA SAN VIGILIO

The Ristorante Pizzeria San Vigilio in Bergamo Alta offers a unique gastronomic experience, pizzas and typical dishes prepared with passion, in an exclusive, cosy and spacious venue.

TRATTORIA VISCONTI

Trattoria Visconti is a historic restaurant located in the centre of the village of Ambivere, family-run since 1932. It offers local products and traditional Bergamo dishes, has an award-winning wine cellar with more than 2000 references and 20000 bottles, and also has a vegetable garden from which almost all the vegetables used come. The cheese trolley always boasts at least 15 references from the Bergamo valleys, from DOP to Slowfood Presidia. During the summer, you can lunch or dine in the shade of the cool garden; during the winter, the must is the large trolley of mixed boiled meats 7 cuts, 7 sauces offered every Monday for lunch and dinner in the warm dining rooms.
